- 5 oz. Josie’s Organics Spring Mix
- 2 tbsp. Olive Oil
- 2 tbsp. Apple Cider Vinegar
- 1 tsp. Dijon Mustard
- 1 Orange, peeled and sliced
- 1/3 cup Pomegranate Arils
- ¼ cup Feta, or Goat Cheese, crumbled
- 2 tbsp. Pumpkin Seeds
- 2 tbsp. Pistachios, roughly chopped

In a small bowl, whisk the olive oil, vinegar, and Dijon together. Season with salt and black pepper to taste.

In a large serving bowl, toss the spring mix with half of the vinaigrette.

Top the salad with the orange slices, pomegranates, crumbled feta, pumpkin seeds, and chopped pistachios.
