  • 1 cup Josie’s Organics Baby Arugula
  • Salt & Black Pepper, to taste

    Preheat oven to 350F. Grease 4 muffin tin liners with olive oil or butter.

    Evenly distribute the prosciutto to line the greased muffin liners.

    Evenly distribute the baby arugula on top of the prosciutto, then crack an egg on top of the arugula in each muffin liner.

    Bake for 15-20 minutes, until desired doneness.

    Season with salt and black pepper to taste. Enjoy warm or store away for meal prep breakfasts!
