Ingredients

  • For the Salad:
  • 3 cups Josie’s Organics Baby Arugula
  • 1 ripe Peaches, pitted and sliced
  • ¼ cup Pecans, lightly crushed
  • 1 ripe Avocado, pitted and sliced
  • 2 tbsp. Fresh Dill
  • 2 tbsp. Goat Cheese
  • For the Tahini Vinaigrette:
  • 2 tbsp. Olive Oil
  • 2 tbsp. Tahini
  • 1 tbsp. Lemon Juice
  • 1 tsp. Dijon Mustard
  • 1 tsp. Maple Syrup
  • Salt & Black Pepper, to taste

    To make the salad dressing, combine all ingredients in a small bowl. Mix well. Add water to thin out to desired taste.

    To make the salad, toss the arugula and ¼ cup tahini vinaigrette in a large bowl. Add the remaining ingredients and toss.

    Transfer the salad to a serving plate and top with goat cheese to enjoy!
