Ingredients

  • 1 tbsp. Olive Oil
  • 2 cups Josie’s Organics Broccoli Florets, finely chopped
  • 6 large Eggs
  • ½ cup Milk
  • ½ cup Cheddar Cheese, grated or shredded
  • ½ tsp. EACH: Salt & Black Pepper

    Preheat oven to 375F. Grease 8 muffin tins with olive oil or butter.

    In a skillet over medium high heat, add the olive oil and finely chopped broccoli. Saute for 5-6 minutes, until bright green and tender.

    In a large bowl, combine the cooked broccoli and remaining ingredients. Mix to combine.

    Evenly divide the egg batter between the greased muffin tins.

    Bake for 13-15 minutes, until set on top. Enjoy warm!
