Ingredients

  • For The Dressing:
  • 3 tbsp. Apple Cider Vinegar
  • 3 tbsp. Olive Oil
  • 1 Garlic Clove, crushed or minced
  • 1 tsp. Dried Italian Herbs
  • 1 tsp. Dijon Mustard
  • 1/4 tsp. Salt
  • 1/4 tsp. Black Pepper
  • Water, to preference
  • For The Salad:
  • 1 12 – oz Josie Organics Organic Romaine, chopped
  • 1 1/2 lb. Chicken, fully cooked, baked or grilled
  • 2 cups Cherry Tomatoes, sliced
  • 1 English Cucumber, sliced
  • 1 small Red Onion, finely chopped
  • 5 oz. Feta Cheese, lightly crumbled
  • 1/4 cup Kalamata Olives, pitted and sliced
  • 1/4 cup Mint Leaves, chopped

Directions

    To make the salad dressing, simply whisk all ingredients together until smooth. Adjust to taste with water, salt, and black pepper.

    In a large bowl, toss together the chopped romaine, sliced cherry tomatoes, sliced cucumber, finely chopped red onion, sliced kalamata olives, and chopped mint until well combined.

    Transfer the salad to a serving dish. Top with the crumbled feta cheese and fully cooked and sliced chicken. Pour the salad dressing
    when ready to serve. Enjoy!
