- 1 lb. Spaghetti
- 5 oz. Josie’s Organics Organic Baby Spinach
- 2 cups Fresh Basil
- 2 Garlic Cloves
- Juice of 1 Lemon
- ½ cup Grated Parmesan
- 1/3 cup Olive Oil
- 1/3 cup Heavy Cream

Total Time: 22 minutes
Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, or according to package directions. Reserve 1 cup pasta water, then drain.
While the pasta is cooking, add the spinach, basil, garlic, lemon juice, and grated parmesan to a food processor. Blend on high speed for 1-2 minutes, until almost smooth.
While on low speed, drizzle in the olive oil to emulsify.
When ready to serve, add the pesto, cream, and 1/3 cup pasta water to a large bowl. Add the spaghetti and toss for 1-2 minutes, until the pasta is well coated in the creamy pesto sauce. Add pasta water to desired preference.
Season with salt and black pepper to enjoy warm!
