Ingredients
- 3-4 Chicken Breasts, fully cooked, grilled or oven-baked
- 1 Josie Organics Organic Chopped Caesar Salad Kit
- 1 ripe Avocado, pitted and chopped
- 1/4th Red Onion, thinly sliced
- 6 strips Bacon, not cooked and chopped
- 1/4 cup Peach Preserves
- 1 tsp. Chili Pepper Flakes
- 1/3 cup Cherry Tomatoes, halved

Heat up a large cast iron or nonstick skillet over medium high heat. Add the chopped bacon to cook for 2-3 minutes. Remove as much grease as you can. Add the peach preserves and chili pepper flakes. Stir to combine and cook for another 5-6 minutes, or until bacon is fully cooked. Remove from heat and set aside to cool to room temperature.

In a large bowl, add the romaine lettuce, croutons (in packaging), parmesan cheese (in packaging), halved cherry tomatoes, chopped avocado, and thinly sliced red onions. Toss to combine.

Add the salad dressing (in packaging) and bacon mixture. Toss once more to coat the salad. Top with the fully cooked and sliced chicken to serve. Enjoy!
