- 10 oz. Josie’s Organics Riced Cauliflower
- 1 large Egg, beaten
- ½ cup Flour
- ½ tsp. EACH: Salt & Black Pepper
- 1/3 cup Olive Oil
- Chives, for serving
- Sour Cream, for serving

Prepare the riced cauliflower according to package directions.

In a large bowl, combine the prepared rice cauliflower, beaten egg, flour, salt and black pepper. Mix to combine.

Heat up the olive oil in a skillet over medium high heat. Once shimmering, add ¼ cup of the cauliflower batter at a time, using the back of your spoon to flatten out into a latkes-like shape.

Fry for 2-3 minutes on each side, until golden brown and crispy.

Remove with a spatula or slotted spoon and transfer to a paper towel lined plate.

Garnish with a pinch of salt and chives. Enjoy warm with sour cream!
