- 1 head Josie’s Organics Organic Cauliflower, chopped into bite-sized pieces
- 2 Josie’s Organics Organic Romaine Lettuce
- 1 tbsp. Olive Oil
- 1 tsp. Each: Garlic Powder, Paprika, and Chili Powder
- ½ cup Buffalo Sauce, or to taste
- ½ cups Prepared Coleslaw
- Lime Wedges, for serving
- Avocado, for serving

Total Time: 35 minutes
Preheat oven to 425F.
In a square baking dish, combine the chopped cauliflower, olive oil, and seasonings. Toss to mix. Add the buffalo sauce and toss once more to evenly coat the cauliflower.
Bake for 20-25 minutes, until fork tender.
To assemble, simply add a generous scooping of the prepared coleslaw into the inside of a romaine lettuce leaf. Add the buffalo cauliflower and sliced avocado. Enjoy warm with lime wedges!
