- 2 Garlic Cloves, peeled
- 2 tbsp. Walnuts
- 3 cups Josie Organics Arugula
- 1/2 tsp. Salt
- 1/3 cup Olive Oil
- 1/2 cup Parmesan, freshly grated, plus more for serving
- Pasta, cooked, to serve

Add the garlic cloves, walnuts, arugula, parmesan, and salt to a food processor. Pulse 2-3 times, or until arugula is cut into fine pieces.
On low speed, slowly drizzle in the olive oil. Once the arugula has become a pesto-like texture, toss with the cooked pasta.
Optional: Thin out the pesto with 1/3 cup reserved pasta water.
Garnish with freshly grated parmesan and crushed walnuts. Enjoy warm!
