- 5 oz. Josie’s Organics Baby Arugula
- 2 tbsp. Olive Oil
- 2 tbsp. Apple Cider Vinegar
- 1 tsp. Dijon
- 1 tsp. Honey, or Maple Syrup
- ½ cup Marinated Beets, chopped
- 1 Honeycrisp Apple, chopped
- ¼ cup Pistachios, roughly chopped
- ¼ cup Goat Cheese, or Feta, crumbled

In a small bowl, whisk the olive oil, vinegar, Dijon, and honey together until smooth. Season with salt and black pepper to taste.

In a large serving bowl, toss the baby arugula with half of the vinaigrette.

Top the baby arugula with the chopped apples, marinated beets, pistachios, and crumbled goat cheese.
