Ingredients
- 6 oz Cooked Orzo
- 4 tbsp. Olive Oil
- 1 large Sweet Potato, finely chopped
- ½ Yellow Onion, chopped
- 3 Garlic Cloves, minced
- 1” Fresh Ginger, minced
- 3 cups Josie’s Organics Baby Kale
- 2 tbsp. Soy Sauce
- 1 tbsp. Balsamic Vinegar
- Salt & Black Pepper, to taste
- Parmesan, for serving

In a large skillet over medium high heat, add 2 tbsp. olive oil.

Add the chopped sweet potato, onion, garlic, and ginger to sauté 8-10 minutes, until potatoes are fork tender.

Add the baby kale, stir to combine, and sauté another 1 minute.

Push all the veggies to one side of the skillet, then add the cooked orzo to the open side with the remaining 2 tbsp. olive oil.

Sauté the orzo in the olive oil for 2-3 minutes, then mix all ingredients together until well combined.

Stir in the soy sauce and balsamic vinegar. Season with salt and black pepper to taste. Enjoy warm with freshly grated parmesan!
