Ingredients
- 1 Josie’s Organics Organic Leek, finely chopped and rinsed well
- 3 tbsp. Olive Oil
- 6 slices Bacon, diced
- 1 Baguette, sliced into 1” thick pieces
- 8 oz Burrata, let sit at room temperature for at least 10 minutes
- Zest of 2 Lemons

In a large saucepan, add the chopped leeks, 2 tablespoon olive oil, and diced bacon. Cook for 10-15 minutes on medium high heat, stirring frequently, until the leeks are caramelized, and bacon is browned. Stir in the zest of 1 lemon. Season with salt and black pepper to taste.

Preheat the oven broiler on HIGH. On a parchment paper-lined sheet pan, add the baguette slices. Drizzle with 1 tablespoon olive oil.

Broil for 1-2 minutes on each side, until golden brown and toasty.

To assemble, evenly distribute the burrata and caramelized leeks between the crostini. Garnish with lemon zest to enjoy warm!
