- 12 oz. Josie’s Organics Organic Green Beans
- 1 cup Cherry Tomatoes, quartered
- 1 cup Chickpeas, drained and rinsed
- ¼ cup Fresh Dill, chopped
- ¼ cup Fresh Mint, chopped
- 6 oz. Feta, crumbled
- 1 ripe Avocado, peeled, pitted and chopped
- ¼ cup Apple Cider Vinegar
- 2 tbsp. Olive Oil
- 2 tbsp. Honey
- Juice of 1 Lemon
- Salt & Black Pepper, to taste

In a small bowl, mix the apple cider vinegar, olive oil, honey, and lemon juice together. Season with salt and black pepper to taste.

Slice the green beans into bite-sized bits. Add to a large serving bowl.

Add to the bowl the chickpeas, cherry tomatoes, freshly chopped herbs, crumbled feta, and avocado. Toss to combine.

Add the vinaigrette and toss once more to coat in the dressing. Enjoy!
