Ingredients

  • 1 head Josie’s Organics Organic Cauliflower, chopped into bite-sized pieces
  • 2 Josie’s Organics Organic Romaine Lettuce
  • 1 tbsp. Olive Oil
  • 1 tsp. Each: Garlic Powder, Paprika, and Chili Powder
  • ½ cup Buffalo Sauce, or to taste
  • ½ cups Prepared Coleslaw
  • Lime Wedges, for serving
  • Avocado, for serving

    Preheat oven to 425F.

    In a square baking dish, combine the chopped cauliflower, olive oil, and seasonings. Toss to mix. Add the buffalo sauce and toss once more to evenly coat the cauliflower.

    Bake for 20-25 minutes, until fork tender.

    To assemble, simply add a generous scooping of the prepared coleslaw into the inside of a romaine lettuce leaf. Add the buffalo cauliflower and sliced avocado. Enjoy warm with lime wedges!
