Ingredients
- For The Dressing:
- 3 tbsp. Apple Cider Vinegar
- 3 tbsp. Olive Oil
- 1 Garlic Clove, crushed or minced
- 1 tsp. Dried Italian Herbs
- 1 tsp. Dijon Mustard
- 1/4 tsp. Salt
- 1/4 tsp. Black Pepper
- Water, to preference
- For The Salad:
- 1 12 – oz Josie Organics Organic Romaine, chopped
- 1 1/2 lb. Chicken, fully cooked, baked or grilled
- 2 cups Cherry Tomatoes, sliced
- 1 English Cucumber, sliced
- 1 small Red Onion, finely chopped
- 5 oz. Feta Cheese, lightly crumbled
- 1/4 cup Kalamata Olives, pitted and sliced
- 1/4 cup Mint Leaves, chopped

To make the salad dressing, simply whisk all ingredients together until smooth. Adjust to taste with water, salt, and black pepper.

In a large bowl, toss together the chopped romaine, sliced cherry tomatoes, sliced cucumber, finely chopped red onion, sliced kalamata olives, and chopped mint until well combined.

Transfer the salad to a serving dish. Top with the crumbled feta cheese and fully cooked and sliced chicken. Pour the salad dressing
