Ingredients
- For the Salad:
- 3 cups Josie’s Organics Baby Arugula
- 1 ripe Peaches, pitted and sliced
- ¼ cup Pecans, lightly crushed
- 1 ripe Avocado, pitted and sliced
- 2 tbsp. Fresh Dill
- 2 tbsp. Goat Cheese
- For the Tahini Vinaigrette:
- 2 tbsp. Olive Oil
- 2 tbsp. Tahini
- 1 tbsp. Lemon Juice
- 1 tsp. Dijon Mustard
- 1 tsp. Maple Syrup
- Salt & Black Pepper, to taste

To make the salad dressing, combine all ingredients in a small bowl. Mix well. Add water to thin out to desired taste.

To make the salad, toss the arugula and ¼ cup tahini vinaigrette in a large bowl. Add the remaining ingredients and toss.

Transfer the salad to a serving plate and top with goat cheese to enjoy!
