In the store, look for curly parsley with vibrant green color leaves and firm stems, free from mold, dark spots or yellowing.
For maximum freshness, refrigerate curly parsley in a zip-lock bag or wrapped in a slightly damp paper towel. Dried curly parsley leaves can be kept for a few months when stored in a tightly sealed glass container and placed in a cool, dark and dry place. If the curly parsley is slightly wilted, sprinkle it lightly with water; without completely drying, store parsley in the refrigerator.
Prior to consumption, wash curly parsley thoroughly to remove dirt and dust. Trim away roots, thick part of stems and remove any bruised or old leaves.
