Celery Hearts

In addition to antioxidants like vitamin C and flavonoids, celery has at least a dozen additional antioxidant nutrients. Celery has long been a favorite for those watching their weight — only 3.5 calories per ounce and lots of dietary fiber. Add nut butter or cheese for a protein-packed, satisfying snack.

Celery hearts can be eaten raw or cooked.

In the store, look for celery with straight, green stalks and rigid ribs that snap crisply when bent. Leaves should be fresh and bright.

For maximum freshness, store celery in the crisper or produce drawer of the refrigerator for up to one week.

Prior to consumption, rinse celery thoroughly to remove and dust or dirt. To keep raw celery fresh for serving, cut celery ahead of time and place cut pieces in ice water for up to an hour.
