In the store, pick scallions that have fresh, green tops and mostly white ends.

Store in a plastic bag in the crisper drawer of the refrigerator to ensure five to seven days of freshness. Keep scallions away from odor-sensitive foods like mushrooms and corn.

Trim off roots and very tops of greens before washing and serving.


Scallions are an excellent source of vitamins K and C, and a very good source of vitamin A and folic acid.
