Scallions

Also referred to as green onions or spring onions, scallions are a flavorful addition to any savory dish, and are packed with vitamins and minerals. You can even enjoy the bright green tops or the bulbs for an added crunch, making them a great addition to salads, stir fries, soups and pastas. Or, roast scallions until they’re golden brown, and serve on their own.

Tips

In the store, pick scallions that have fresh, green tops and mostly white ends.

Store in a plastic bag in the crisper drawer of the refrigerator to ensure five to seven days of freshness. Keep scallions away from odor-sensitive foods like mushrooms and corn.

Trim off roots and very tops of greens before washing and serving.

Scallions are an excellent source of vitamins K and C, and a very good source of vitamin A and folic acid.
